  • Preheat oven to 180°C. Brush an 11 x 21cm (base measurement) loaf pan with melted (Melted butter, to grease) dairy spread to lightly grease. Line the base and 2 opposite sides with non-stick baking paper, allowing it to overhang.

  • Sift the combined flours (265g (1 3/4 cups) self-raising flour|40g (1/4 cup) plain flour) and cinnamon (1 tsp Coles Cinnamon Ground) into a large bowl. Stir in the sugar (140g (2/3 cup, firmly packed) brown sugar) and make a well in the centre.

  • Mash bananas (2 overripe medium bananas, mashed) in a medium bowl. Add the eggs (2 eggs, lightly whisked), milk (125ml (1/2 cup) skim milk), and melted butter (50g butter, melted, cooled), and stir until well combined. Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the prepared pan and smooth the surface.

  • Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 5 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.

Why does some banana bread turn out dry?

Along with the butter, milk and eggs, the ripe bananas provide moisture in this recipe. If the bananas are too small the bread may turn out a bit dry. This recipe asks for 2 medium ripe bananas, which is about 1 1/4 cups when mashed. For soft and tender banana bread, always measure your flour exactly and don’t over mix when stirring. Like muffins, you should only stir the mixture until just combined. You want your banana bread batter to spread easily in your prepared loaf pan. Then cook until a skewer inserted into the centre comes out clean. And remember, if it turns out a bit dry, just slather it with extra butter!
