Sometimes I get a craving for some freshly baked banana bread but don’t have a bunch of ingredients or the time to throw them together. This 5 Ingredient Banana Bread recipe helps satisfy my craving no matter what.

What’s the secret ingredient that brings it all together so quickly and easily? Hold onto your hat – it’s a box of vanilla cake mix!

What? Vanilla Cake Mix???

That’s right, your eyes didn’t deceive you. This recipe calls for vanilla cake mix.

Now I don’t know about you, but I’d never seen a recipe for banana bread with vanilla cake mix in it before, but boy does it make a difference.

The preparation is SO easy – essentially mix and pour, though you do combine the wet ingredients and dry ingredients separately at first.

Plus, since the cake mix is taking care of a lot of the work for you, you only have to worry about 5 ingredients (not including any toppings you may like) and there’s not a whole lot of measuring involved.

5 Ingredient Banana Bread Recipe

Makes 1 loaf

Ingredients

  • 1.5 cups banana mash (about 3 medium bananas or 9.6 oz)
  • 2 eggs
  • 3 Tablespoons melted butter or oil (if using butter measure after melting)
  • 1 (16.25 oz) box of vanilla cake mix
  • 1 teaspoon baking soda
  • Optional: honey and/or extra butter for serving

Instructions

1. Preheat oven to 350 F. Generously butter a loaf pan and set aside.

2. In a medium bowl, mash the bananas, then mix in the eggs and the melted butter or oil. In a large bowl, pour mix the cake mix and the baking soda.

3. Add half of the mashed banana into the cake mix, then use a hand mixer to mix for a few minutes.

4. Add in the remaining of the mashed banana mix and mix until you have a batter that’s thoroughly combined and has a bit of air and fluffiness to it.

5. Pour the batter into the buttered pan then place in center of the oven. Bake for 35 to 40 minutes or until you can insert a butter knife or long toothpick into the center of the bread and it comes out clean. (Keep an eye on it around the 30 minutes because everyone’s oven is different, insert the knife to check and after every 5 minutes check again until it comes clean. My oven took about 38 minutes.)

6. Once baked through set on a rack to cool completely before cutting into.
