What are Key Lime Pies?

The Key Lime Pie– the official pie of Florida – first originated in, where else but the Florida Keys, where the Key Limes grow sporadically. True Key Limes have a more distinctively sour ‘limey’ taste than the ones we can buy in the supermarket.

The plantations that originally grew the limes were destroyed back in the 1920s so the limes (which resemble small lemons with little green patches) are only found in the back gardens of a lucky few these days and for a very brief length of time. The limes that were replaced in the plantations are, in fact Persian Limes and do not have that rare flavour – more lime than lime itself it is said. If you fancy trying your hand at planting your own, Jo at Plant Food at Home, has a great article on how to do so!

Condensed milk was used in the pie filling instead of regular milk because of poor refrigeration back in the late 1800s, when the pie was first produced. The discovery of Condensed milk must have been greeted with much enthusiasm in those days before heat-treated milk (and fridges) but for this particular recipe, inspired by the Minimalist Baker, I have replaced the dairy quotient with almonds and coconut milk. Their version uses Agave syrup and cashews, but I didn’t have either so I improvised! Actually, using blanched almonds is a great idea instead of cashews, they are both cheaper, and seem to soften quicker when soaking. I would be interested to try the vegan Condensed milk, and I have a can here to try, but I think that might require a little more experimentation first!

Ingredients

The filling is painfully easy, just five ingredients:

  • lime juice (use fresh, not bought),
  • almonds,
  • coconut cream and coconut oil
  • maple syrup.

These are blended together, spooned into your pie-crust (or crusts, if you make minis) and frozen. Once chilled, to make it extra special, how about topping it with some whipped and sweetened coconut cream for a truly luxurious finish.

This is ONLY a list of ingredients for the recipe; please see recipe card below for complete printable recipe.

Because this dessert is frozen, it is a perfect make-ahead dessert, just make sure you remove it from the freezer in plenty of time (on a cool day, it will thaw in a flash on warm days!).

Options:

  • Try replacing the lime with lemon or orange juice instead.
  • Try different cookie bases, Digestives are a classic cheesecake base (in the UK, look for supermarket own brand, these are usually vegan), Oreos give a delicious dark chocolate element, whilst Lotus Biscuits are sweet and spicy.
  • Make one large tart, or lots of minis
  • Use gluten-free biscuits instead of normal biscuits.
  • Mix some crushed nuts into the crumb base for some added texture: pistachios would be great!

Tips:

  • To make sure your crumbs are crushed thoroughly, place your biscuits in a ziplock bag, do the bag up nearly all the way, just leaving a tiny gap, and then use your rolling pin to crush them to a crumbly dust. If you leave your crumbs too chunky, it will be tricky to press them into the case(s).
  • Once frozen, you can cut the large tart into wedges and then pop these in a freezer bag. You can also do this with the minis.

FAQs

What makes key lime pie thicken? ›

Combining the lime juice with the egg yolks and condensed milk creates a chemical reaction that causes the mixture to thicken all on its own (the acid causes the proteins in the yolks and milk to bond together).

Can I substitute lime juice for key lime juice in a pie? ›

You may substitute the key lime juice with a mixture of 1/4 cup fresh lemon juice and 1/4 cup fresh lime juice.

What is key lime pie filling made of? ›

Key lime pie ingredients are simple: sweetened condensed milk, lots of lime zest and juice (preferably from key limes), and just enough egg to give it a good set. Pour the filling into a pre-baked graham cracker crust, bake briefly until the pie is set, and let it chill. Top the pie with whipped cream and serve.

Why is key lime pie not green? ›

People expected their authentic Key lime pies to be green, matching the bright green lime color of the Persian limes they saw in their grocery stores. Key lime pie filling, however, takes its yellow color from the egg yolks used in its production.

What is the difference between Key lime pie and lime pie? ›

In terms of taste, key limes have a higher acidity, making them a little more tart than what we consider "regular limes." This makes them ideal for pairing with sweeter ingredients, hence the ever-popular Key lime pie.

Why is my Key lime pie weeping? ›

As it turns out, undercooking and overcooking can both cause weeping meringue and unwanted moisture on top of your pie (aka beading). Overcooking meringue causes those little sugary drops of moisture on top of baked meringues.

Can you use bottled lime juice instead of fresh limes? ›

Although it seems like a simple swap, you need to be careful when substituting bottled lime juice for fresh. Check the label to be sure it is pure juice; some varieties, such as the popular Rose's label, are sweetened with high fructose corn syrup.

Can I use regular limes in place of Key limes? ›

Can you taste the difference? Despite the slight flavor difference, swapping out Persian limes for Key limes is a pretty common substitution. Taste of Home even notes that, when baked into a dessert, it can be hard to tell the difference between the two taste-wise.

Can I use normal limes for Key lime pie? ›

Unless you live in the Florida Keys, key limes are near impossible to find. Furthermore, they're so tiny that you'd need to juice at least twenty of them for this recipe. No thank you! Ordinary limes make an exceptional Key lime pie, and they are a much better alternative to bracingly tart bottled Key lime juice.

Why is Publix key lime pie so good? ›

Rather, the key to perfecting the Publix key lime pie is a simple ingredient added to the graham cracker crust. It's not the graham crackers themselves that make the crust special, but rather the unique addition of crushed toasted almonds.

How many key limes for 1 cup of juice? ›

This can vary depending on the ripeness, size, and juiciness of your fruit, but as a general rule, you will need approximately 18-20 key limes for 1 cup of juice.

What is so special about key lime pie? ›

The filling in a Key lime pie is typically yellow because of the egg yolks. The filling is made similarly to a Magic Lemon cream pie, by simply mixing the ingredients without cooking: the proteins of the egg yolks and condensed milk and the acidic lime juice curdle, thickening the mixture without baking.

Is Key lime pie a southern thing? ›

key lime pie, an American dessert that consists of a graham-cracker or pastry crust, a yellow custard (primarily egg yolks, sweetened condensed milk, and key lime juice), and a topping of either whipped cream or meringue. The sweet and tart pie reportedly originated in Key West, Florida, in the late 19th century.

Who is famous for Key lime pie? ›

In the 1800's a ship salvager named William Curry, Florida's first self-made millionaire had a cook known as Aunt Sally. Historians believe that Aunt Sally did not create the pie but instead perfected the pie created by area fishermen. William Curry has a mansion in Key West that is still standing today.

What color is authentic Key lime pie? ›

What color is key lime pie? An authentic key lime pie should have yellow custard, not green. Real key lime juice is yellow and the skin of the fruit ranges from green to bright yellow.

What to do if key lime pie is too runny? ›

Easiest ways to fix a runny pie.

Let your pie cool overnight. Don't be tempted to cut into it sooner! If possible, pour the extra liquid off the pie (save that for ice cream!) and pop it into the freezer for 10 or 15 minutes before serving. It'll hide the runniness and taste great!

What makes pie filling thicker? ›

Very often flour or cornstarch is used, but in certain instances tapioca, arrowroot and potato starch can also help achieve the desired consistency.

What can I use to thicken a pie? ›

All-purpose flour is an easy solution, as you're sure to have it in your pantry. Since it's lower in starch, you'll use more of it than you would higher-starch thickeners. Quick-cooking tapioca makes filling bright and clear, but also gives it a stippled and somewhat sticky texture.

How do you make a pie less watery? ›

Here are some tips to prevent runny apple pie.
  1. Precook the filling. ...
  2. Reduce the juice. ...
  3. Experiment with different thickeners. ...
  4. Vent the top crust. ...
