This is one of my very favorite casseroles to make! If you need a last minute Low Carb dinner recipe, this Chicken Florentine casserole can be made with ingredients you might already have on hand!

One of the best things about casseroles, is they are typically very easy to put together and often have a fair amount of servings. This is great for anyone who struggles with meal prepping and having enough Keto meals on hand.

  • Cooked Chicken
  • Mushrooms
  • Frozen spinach
  • Heavy cream
  • Mascarpone cheese
  • Parmesan cheese
  • Mozzarella cheese

🔪 How to Make Chicken Florentine Casserole

Preheat oven to 375°F.

Heat a skillet to medium and add in the butter, then once melted, add in the mushrooms.

Sauté for a few minutes and once they have some good color, add in the garlic.

Sauté for about 15 seconds, then add in the mascarpone cheese, turn off the heat and stir until melted. Remove from the heat and allow to cool slightly.

In a large mixing bowl, add in the chicken, spinach, grated parmesan cheese salt and pepper.

Add in the heavy cream, half the mozzarella cheese and the mushrooms, garlic and mascarpone mixture.

Stir until well combined, then pour into a 9 x 9 casserole baking dish that's been sprayed with nonstick spray.

💡 Tips for Making Keto Chicken Casserole

  • This can be a great make-ahead dinner, especially for busy weeknights. Simply prepare the ingredients, mix together and add them to the casserole dish. Then store in the fridge, top with the shredded mozzarella cheese and bake when you're ready.
  • To make your life easier, you can pick up a rotisserie chicken, shred it up and use it in this recipe. It's definitely a time-saver, verses cooking your own chicken.

🔄 Substitutions and Additions

  • Chicken: As I mentioned above, using store bought rotisserie chicken is a great time saver.
  • Mushrooms: Fresh mushrooms are best and have the most flavor, but in a pinch, you can use jarred/canned mushrooms.
  • Onions or Leeks: For added flavor, you can sauté some yellow onions or leeks along with the mushrooms and add them into the casserole.
  • Cheese: If you're out of parmesan cheese, Romano or Asiago will work just as well. Provolone or Monterey Jack also makes a great replacement for the mozzarella cheese.
  • Spinach: If you happen to have fresh spinach on hand, you can sauté it in the skillet before adding it to the casserole. Just be sure to make a LOT, we know how spinach shrinks down to almost nothing once cooked!
  • Mascarpone: If you don't have mascarpone cheese, cream cheese will work as well. Just be sure to adjust your macros accordingly, since cream cheese has slightly more carbs.

Ingredients

  • 14 ounces shredded cooked chicken
  • 8 ounces baby bella mushrooms, sliced
  • 9 ounces frozen spinach, thawed and well drained
  • 1 ½ cups shredded mozzarella cheese, divided
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • ½ cup mascarpone cheese
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
