Stews are cooked in a thicker broth that is so thick, that it could be mistaken for gravy. This chicken stew is cooked in a combination of heavy whipping cream and chicken broth. The longer you let it cook and simmer, the thicker the stew will become.

I think this recipe borders between a stew and a soup, so it’s ok if you call it either.

Heavy whipping cream is the secret ingredient that makes this stew extra creamy. If you are lactose intolerant (or you merely want to consume less dairy) I suggest using coconut cream instead.

It’s the kind sold in a can, not the carton of coconut milk. Since this recipe has so much heavy whipping cream in it, I suggest cooking it slowly on the stove. When you cook dairy in the slow cooker, it begins to separate and doesn’t look as appetizing.

It doesn’t really matter which type of chicken you use to make this soup. It’s a wonderful way to use leftover chicken thighs or just shred some rotisserie chicken and add it to the broth.

Both chicken thighs and chicken breast meat will taste perfect in this stew. You can even use ground chicken – just brown and cook it completely before you add it to the stew.

Want it to be spicier? Add some Cajun chicken meatballs to the stew!

To keep it low-carb, I only used four types of vegetables in this stew – onion, carrots, celery, and green beans. If you leave out the green beans, you’ll decrease the amount of carbs in the stew.

There are currently only 4 grams net carbs in each serving, so it’s a pretty low-carb stew to begin with. You could add some spinach or kale to stew to give it more nutrition and fiber.

If you don’t mind adding a few more carbs, saute some mushrooms and add them to the stew too.
