More Healthy Treats FAQs

If you’re an avid sourdough baker, you know that maintaining a sourdough starter often leads to an abundance of discard. Rather than toss it, why not turn it into mouthwatering desserts? Today, I’m sharing a variety of sweet treats that make use of sourdough discard, from cookies and cakes to pancakes and more. Get ready to indulge in some irresistible creations that will have you looking at sourdough discard in a whole new light.

Jumping on the Sourdough Bandwagon

Back around Covid when I first started noticing the sourdough craze beginning to surface… you know, when you weren’t sure you’d be able to get bread (or toilet paper).

Everyone seemed to become sourdough bakers overnight – and that was when I made my first sourdough bread loaf.

Well, life got back to normal, I stopped baking, and just recently, more for health than survival, I jumped back into sourdough baking again.

And I kinda remembered why I stopped.

It was a LOT of work to keep up with the daily feeding of the starter. And there was SO much discard.

Enter, sourdough discard recipes.

The Beauty of Sourdough Discard Recipes

I love that there’s a way to use all that discard without wasting it. Until I discovered discard recipes, it was a real internal conflict for me!

Beyond different varieties of sourdough bread, I’ve made discard tortillas which are a staple at my house.

But soon (thanks, Instagram,) I definitely became intrigued by the idea of using sourdough discard in desserts.

In the spectrum of health, homemade is better than store-bought. And if you can include some sourdough in your dessert also, it raises the health meter just a little bit.

Desserts are such a great way to use up that discard – and you can feel just a little bit better about indulging in a sweet treating knowing some healthy sourdough is in the mix.

I’m assuming y’all know about sourdough since you’re here looking for discard recipes, but I’ll throw in a few FAQ if you’re new to all this.

Sourdough Frequently Asked Questions (FAQ)

What is Sourdough Discard and How is it Different Than Starter?

Active sourdough starter (or mature starter) has been fed within the past 6-8 hours, has doubled, and is bubbly and ready to use in recipes that call for active sourdough starter. It has the leavening agent in it and no other yeast or leavening ingredient is required.

Sourdough discard is a byproduct of maintaining a sourdough starter, typically removed and discarded during the feeding process to keep the starter healthy.

Sourdough discard is also referred to as inactive or unfed sourdough starter – it has passed the mature stage and is in a dormant stage.

Recipes with discard require some other leavening ingredient, such as yeast, baking soda, or baking powder. Or you can use it for recipes like crackers, that don’t need to rise.

Be aware when you’re looking at recipes to see if active starter is needed or sourdough discard.

All of these recipes can be made with discard, though it is recommended to let it reach room temperature if coming right out of the fridge.

Why Make Sourdough Discard Recipes?

Instead of wasting this discard, discard is great to use in all kinds of recipes, including desserts.

The discard adds a unique tangy flavor and also contributes to the texture and rise of baked goods.

Another added benefit of using sourdough discard in desserts is that helps reduce food waste and us a chance to creatively use every part of their sourdough starter.

Why Make Sourdough at All?

Sourdough bread is often considered a healthier option compared to commercial bread due to the fermentation process it undergoes.

Sourdough also produces mayprebiotics, which feed the good bacteria in your gut, improving your gut health.

The fermentation of sourdough starter helps break down gluten and phytic acid (which inhibits your body’s ability to absorb nutrients), making it easier to digest for some individuals.

Sourdough bread has a lower glycemic index compared to other breads, which means it may lead to smaller spikes in blood sugar levels and can help with weight management.

The fermentation process also increases the bioavailability of nutrients, making it easier for the body to absorb essential vitamins and minerals.

Last but not least, sourdough bread has a more complex and, to many, a more satisfying flavor, which can contribute to a more enjoyable eating experience.

OK, let’s get to these amazing recipes!

FAQs

Is eating sourdough discard healthy? ›

Sourdough discard recipes not only reduce waste but also offer health benefits, making them a wonderful addition to a balanced diet. The fermentation process of the sourdough starter increases the availability of certain nutrients and can help improve digestion.

What can I do with day 3 sourdough discard? ›

Don't throw it away! Instead, use it to make delicious and nutritious treats like pancakes, waffles, muffins, and bread. Sourdough discard is a great source of natural yeast and flavor, and can add a unique tangy taste to your baked goods.

Can you use sourdough discard in cake mix? ›

The sourdough starter discard doesn't bring any sourness to this classic cake, but I like including it because the mixture results in a tenderer crumb thanks to the well-fermented flour. Plus, it's a way to use flour and water that would normally go into the compost.

How many times do you discard sourdough starter? ›

Room-temperature storage: Feed twice a day

Room-temperature starter should be fed every 12 hours (twice a day) using the standard maintenance feeding procedure: discard all but 113g, and feed that 113g starter with 113g each water and flour.

When should you not eat sourdough bread? ›

It's pretty easy to tell when sourdough bread has gone bad because it will be covered in visible signs of mold growth and will feel hard both inside and out. It may also smell bad too, but not always. Once it's past the fresh stage (first 24 hours) you will notice some deterioration in crust and crumb.

How long can you keep sourdough discard before it goes bad? ›

You can store mature sourdough discard in the refrigerator indefinitely. As long as there is no mold, it is good to use. It may develop a grayish liquid on top called “hooch” which can be poured off before use or stirred in. If you stir it in, the flavor will become more sour.

Can I feed my sourdough starter without discarding? ›

Once the sourdough starter is established on day 8, all you have to do is just give it flour and water. You no longer need to discard half of it.

Can I leave sourdough discard out overnight? ›

As long as your kitchen isn't too warm (I'd say 78°F or higher) your starter/discard will be fine stored at room temperature for at least a few days without feeding. The flavor will get more acidic the longer it sits.

Can I use immature sourdough discard? ›

However, “discard” doesn't necessarily mean “throw out.” A two-to-three day old starter can be used to add amazing flavor and texture to a number of baked goods, even if it is not quite ready to make your dream loaf of sourdough bread.

What is a nanoland cake? ›

Nanalan cake, a delicacy originating from South Asia, has gained immense popularity worldwide for its unique blend of flavors and exquisite presentation. This delectable dessert, characterized by its moist texture and rich taste, has become a favorite choice for celebrations and special occasions.

Does sourdough discard need to be room temperature before baking? ›

Use it immediately for baking: If you are going to bake something right away (same day), you can keep the discard at room temperature until you're ready to bake. Cover it with plastic wrap to keep it from drying out until you're ready to use it. Check out a few of my favorite sourdough discard recipes here.

What is a nanalan cake? ›

Picture this: soft layers of sponge cake infused with fragrant flavors, sandwiched between velvety buttercream, all topped with delicate decorations that tell a story of tradition and family heritage. Welcome to the world of Nanalan Cakes, where every bite is a celebration of generations past and present.

What happens if you forgot to discard starter before feeding? ›

If you don't get rid of the excess, eventually you'll have more starter than your feedings can sustain. After a few days, your daily 1/4 cup flour and water won't be enough to sustain your entire jar of starter, and your starter will be slow and sluggish, not much better than discard itself.

What is the best flour for sourdough starter? ›

The best flour blend for creating a new sourdough starter is 50% whole-meal flour (whole wheat or whole rye) and 50% bread flour or all-purpose flour. I recommend a 50/50 mix of whole wheat flour and bread flour. Why do you need to use these two types of flour?

How to tell if sourdough starter is bad? ›

Typical signs of food spoilage and mold include pink, orange, or green colors, white fuzzy spots, or sometimes areas that are darker with white areas on top. If you see any of these signs, I would recommend throwing your starter away and creating a new one.

Can you eat sourdough starter discard? ›

Culinary-wise, sourdough discard can be used in various recipes such as pancakes, waffles, muffins, sourdough pasta and quick breads like sourdough banana bread to impart a tangy flavor, reduce food waste, and add complexity of flavor to your baked goods.

Is my sourdough discard bad? ›

My advice is to use discard within one week. This is because after a week, it will start to taste very sour and become very acidic. You probably don't want to use old sourdough discard in a sweet discard recipe as it will produce a sour tasting product.

Can you bring sourdough discard back to life? ›

Absolutely! A jar of sourdough discard serves as an insurance policy against starter death. If you have some discard on hand, remove a spoonful of it and feed it fresh flour and water in a clean jar. You should have a bubbly starter ready to bake with after a couple of feedings, depending on the discard's condition.

Is Sourdough Bread a junk food? ›

It's richer in nutrients, less likely to spike your blood sugar, contains lower amounts of gluten, and is generally easier to digest than bread made with baker's yeast. Sourdough bread is one of my favorite types of bread. Not only do I find it tastier than conventional bread, but it's also arguably more nutritious.
